Santa Monica based Veggie Grill plans to open several new California locations during the first half of 2013 in Los Angeles, Orange County, and San Diego. The chain will also expand its current footprint in Seattle.

Veggie Grill recently secured $20 million in funding from current shareholders and new investors, following reports that show same-store sales growth of 16 percent.

In the past year alone, Veggie Grill doubled the number of locations it operates from 8 to 16.  The plan is to double again by the middle of next year.

It's plant-based menu is clearly popular with both the restaurant-going public and investors looking to cash in on the growing vegetarian and vegan trends. The chain also offers gluten-free and soy-free options—two other growing dietary movements.

“The interest we received from our investors was quite substantial and exciting," said Veggie Grill's Chief Energizing Officer Greg Dollarhyde. "This additional capital base will support our aggressive growth plans to meet the increasing consumer demand for delicious, vegetarian food.”

The chain's current Southern Californis locations include Hollywood, Los Angeles, Santa Monica, El Segundo, Torrance, Long Beach, and Irvine.

In Northern California, a Veggie Grill is located in San Jose at the Santana Row shopping center.

Oregon stores can be found in Beaverton, Portland, and Hillsboro. There are currently two Vegie Grill restaurants in Seattle.
